I actually kinda love those “what I ate in a day posts.” Maybe I’m just nosey 😅, but particularly with athletes, I like to see a FULL healthy plate loaded with food. Maybe it’s because I grew up during the “five almonds is a snack” era of diet culture (yikes).
Thankfully, my close friends and I never fell into that mindset, but wow, has the food and wellness world changed since then!
On the other end of the spectrum, I also didn’t have much nutrition education growing up. As a young adult, I had to go to the library to find from books what I should eat and why. When I watched that Hack Your Health documentary on Netflix, as someone who has long been interested in gut health, the idea instantly made sense and seemed practical.
Research has found that people who eat 30 or more different types of plants each week have a more diverse and resilient gut microbiome. The biggest surprise to me was that diversity mattered more than weather someone followed a vegetarian, vegan, or omnivore diet.
The goal isn’t a “perfectly clean” (I hate that term) diet, it is variety!
Isn’t That… a Lot?
I actually tried this months ago and found it to be a fun challenge. And not too difficult, as long as you do a little planning.
Most people find themselves eating the same 5-10 different plants each week. Tomato sauce in spaghetti, chopped in salsa, fresh on a sandwich.
So I thought I would share how I got 30+ in one day to inspire you to try in your own challenge!
This week I’m sharing what I think are the most affordable and accessible options. Trust me, I know what it’s like to have a Walmart as the only grocery store in town and a limited food budget. So here. we. go!

*I also had a smoothie from Daily Harvest as I drove into the office, which upped my plant variety for the day, but isn’t super budget friendly. It does however help me out when I’m in a hurry and is a heck of a lot better than fast food, so I will occasionally pay for the convenience. I do have a discount code if you want to try them out!
As you can see above, I counted coffee, tea, spices, and herbs in my total. My post on IG talks a little about the why, but I’m planning on diving into more on that in a post coming up soon, so stay tuned for that!
